Spiced Marmalade Glazed Gammon

1.20kg gammon, raw
1g cloves
300g onions
50g KNORR Professional Ginger Puree
4 Lt water
100g marmalade, orange
40g brown sugar
30ml COLMAN’S English Mustard
  1. Place the gammon in a large pan, cover with water then add the cloves, onions and puree
  2. Bring to boil then reduce the heat and gently simmer for 2.5 hours
  3. Remove the gammon from the water, allow to cool slightly and remove the skin. Cut any excess fat from the gammon
  4. Preheat the oven to 200°C
  5. Put the marmalade, sugar and mustard in a small saucepan, add 2 tbsp of water and stir until everything has melted
  6. Bring to boil, then remove and pour half over the gammon
  7. Put the gammon into the oven and cook for 15 minutes. Remove and pour over the remaining glaze then return to the oven for a further 10 minutes until golden
  8. Carve the gammon into thin slices and place onto a serving plate
